So my truck was set up at the dealer and leveled for proper cutting edge wear on the mvp. It now has a shoe kit on it. Can someone tell me how to properly adjust the shoes so I don't wear our the center of the cutting edge a lot quicker than the outsides?

Most including myself will tell you to pitch the shoes. To answer ur question, I can't and don't think I've seen the question asked here on PS. I would think there would be little impact on the center.

I plow a lot of Gravel drives and feel that the shoes are needed for a lot of what I do.

unless your center pin is worn out and sloppy, the shoes should not make the center of the plow wear any faster than the edges.
