I purchased a 2018 Silverado 1500 crew cab and put a Fisher Minute Mount 2 on it. When the plow is in the truck runs hot when traveling over 50 mph. Runs about 240 degrees. I believe it has to do with the shutter that Chevy put in the grill.

Any suggestions on how to keep temp down?

Change the angle of the plow, lower the plow.
Dont drive so fast.

Your not getting airflow to the radiator.
That's the issue, so drive slower

Seeing you have a crew cab, that means you don't have plow prep (regular cab only on a 1500) so GM won't be able to assist under warranty. If the fan temps can be lowered, you may have to seek a local tuning shop out and see if they can change the parameters.

Youve never had your plow on the day after a storm checking out your lots? An driving 50mph?
