How many oxygen sensors are on a truck and are they hard to replace?

Should only be one on your truck. Look at the exhaust y-pipe ahead of the cat and you should see a "spark plug type" looking sensor. There should be either one or three wires leading into it. They are not typically too hard to change. Unless it gets really rusted in...

You must not have much salt on the roads....LOL (insert big laugh here!)

Most are not bad to change, aside from the purchase price of the new one. My '84 has it removed and a pipe plug installed (previous owner). Thank goodness for no smog checks.

1987....with an o2 sensor? Unless it's fuel injected there shouldn't be one at all.
Carb GM's don't need them that early (AFIK) My 86, 85 and 83 were/are all devoid of them (all carb 305/350's). Fuel injected would have it- not too bad to change- you need a BIG wrench or a special socket to allow the wire to pass through, and use never seize on the threads of the replacement. In the salt belt here the body rots away and/or they fail internally before the hex boss is too weak to remove it.

Feed back carbs have O2 sensors on some brands of vehicles.
Newer stuff (OBD II ) 94 / 95-ish have at least one before and one after the cat to make sure the cat is working right and the computer can nark on you to emissions checkers.
